Ingredients

  • 2 pounds pork barrel combat zone

  • salt and clean footing pepper, to taste

  • 2 onions cut into 1-inch wedges

  • 2 apples cut into 1-inch wedges

  • 1/2

    cup apple juice

  • 2 tablespoons STAR Unfiltered Organic Apple Cider Vinegar

  • 1 tablespoon whole grain dijon mustard

  • 1 tablespoon chopped sage

Instructions 

  • Preheat oven at 350˚F.

  • Lightly grease a roasting pan with cooking spray; season pork tenderloin with salt and fresh ground pepper and transfer it to the roasting pan.

  • Arrange wedges of onions and apples around the meat and set aside .
  • In a mixing bowl, combine apple juice, apple cider vinegar, and mustard; whisk until thoroughly combined.

  • Stir in sage .
  • Pour the apple-dijon mixture over the kernel .
  • Cover with foil and roast for 20 minutes.

  • Remove foil and put back in oven .
  • Continue to cook for 15 to 20 minutes, basting the meat every 5 minutes with the juices in the pan. Use an instant read thermometer to check for doneness – pork barrel is cooked through when its home temperature reaches 145˚F .
  • Remove from oven and transfer the pork to a cutting board; let rest for 10 minutes before cutting.

  • Cut and serve with the apples and onions.
